  • 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, softened
  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste
  • 1/2 cup (100 g) granulated white sugar (for frosting)
  • 1/2 tbsp culinary lavender
  • 4 oz (113 g) cream cheese
  • 1/4 cup (56 g) unsalted butter, softened (for frosting)
  • 1 cup (130 g) powdered sugar
  • 1/2 tbsp culinary lavender (for frosting)
  • 1 tsp vanilla bean paste (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Steep 3 tablespoons of Earl Grey tea in hot water for 5 minutes; let cool slightly.
  3. In a bowl, mix flour, baking powder, baking soda, and salt.
  4. In a stand mixer, cream softened butter and sugar until fluffy. Add the egg, cooled tea infusion, and vanilla paste; mix well.
  5. Gradually combine dry ingredients with wet mixture until just blended.
  6. Scoop dough onto prepared sheets, spacing them 2 inches apart.
  7. Bake for 9 minutes or until edges are lightly golden; they should be slightly underbaked.
  8. Cool on sheets for 5 minutes before transferring to a rack.
  9. For frosting, beat cream cheese and butter; gradually add powdered sugar, culinary lavender, and vanilla paste until smooth.
