Instructions

  1. Wash the lemons thoroughly and peel them carefully using a vegetable peeler, ensuring minimal pith remains.
  2. Place the lemon peels in a large glass jar and cover with high-proof white grape juice. Store in a cool dark place for 30 days, shaking gently every few days.
  3. After 30 days, prepare your simple syrup by warming the water in a pot over low heat and dissolving the sugar completely. Allow it to cool to room temperature.
  4. Strain the infused mixture through a sieve lined with coffee filter or cheesecloth into a bowl, separating the solids from the liquid.
  5. Mix in the cooled simple syrup until well combined, then bottle your limoncello and let it rest in a cool dry place for another 30 days before serving.
