  • 1 cup lemon curd
  • 2 pints fresh raspberries (smashed)
  • Raspberries and mint leaves for garnish

Instructions

  1. In a large bowl, whip together 2 cups of heavy whipping cream, 2 teaspoons of vanilla extract, and 1/3 cup of powdered sugar until stiff peaks form. Set aside.
  2. In another bowl, beat 8 oz of softened cream cheese with 1 cup of lemon curd until smooth.
  3. Gently fold the whipped cream into the lemon mixture until just combined.
  4. Layer the lemon fluff and 2 pints of smashed fresh raspberries in individual jars or a large serving bowl.
  5. Top with extra raspberries and mint leaves for garnish. Chill until ready to serve.
