  • ¼ cup granulated sugar (+ more for brûlée)
  • 1 lemons (zested)
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

  1. Rinse lemons, slice in half, and scoop out flesh.
  2. Squeeze lemons to extract juice; strain to remove seeds and pulp.
  3. In a saucepan, combine heavy cream, sugar, and lemon zest. Heat over medium-low until sugar dissolves and cream thickens slightly (about 5 minutes).
  4. Remove from heat and stir in lemon juice and vanilla extract until thickened.
  5. Strain mixture through a sieve to achieve smoothness; let cool for about 10 minutes.
  6. Fill hollowed lemon halves with the mixture and refrigerate for at least 1-2 hours or overnight.
  7. Just before serving, sprinkle an even layer of sugar on top and caramelize using a blowtorch.
