  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic (about 3 cloves)
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced carrots, onion, and celery for 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Add chicken breasts and pour in low sodium chicken broth. Season with black pepper, dried parsley, dried thyme, salt, and bay leaves.
  3. If using an Instant Pot, seal the lid and cook on high pressure for 15 minutes. For slow cooker use, cook on low for 6 hours or high for 3 hours.
  4. Remove cooked chicken from the pot and shred with two forks. Return shredded chicken to the pot along with dry orzo pasta.
  5. Simmer on medium heat until orzo is tender (about 10 minutes). Stir in fresh lemon juice before serving.
