  • 12 fresh oysters (cleaned and on the half shell)
  • 6 tbsp unsalted butter
  • 2 garlic cloves (minced)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • Sea salt and black pepper to taste

Instructions

  1. Preheat your grill to high heat (about 500°F / 260°C).
  2. In a small saucepan over low heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant. Stir in lemon juice, lemon zest, parsley, salt, and pepper.
  3. Place oysters flat-side up on the grill. Close the lid and cook for 2–3 minutes until edges curl.
  4. Spoon about 1 teaspoon of lemon butter sauce onto each oyster, then close the lid again and cook for another 1–2 minutes until sizzling.
  5. Remove carefully using tongs, serve immediately with lemon wedges.
