  • 1 + 1/2 cups fresh blueberries, divided
  • ½ cup icing sugar (for glaze)
  • 12 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In a separate bowl, combine milk, oil, egg, vanilla extract, lemon juice, and lemon zest until well mixed.
  4. Pour the wet ingredients into the dry ingredients and mix gently with a rubber spatula. Fold in one cup of blueberries.
  5. Pour the batter into the prepared loaf pan, topping with remaining blueberries.
  6. Bake for about 55 minutes or until golden brown; check doneness with a toothpick.

  8. In a small bowl, mix icing sugar with lemon juice until smooth; drizzle over cooled bread.
