  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large eggs (50 grams each, out of shell)
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, melt the unsalted butter and combine it with granulated sugar until smooth. Stir in rolled oats and flour until well mixed. Press this mixture firmly into the bottom of an 8×8-inch baking pan.
  3. Bake the crust for 15 minutes until lightly golden and let it cool slightly.
  4. In another bowl, whisk eggs until frothy. Add honey, lemon zest, lemon juice, and flour; mix thoroughly until smooth.
  5. Pour the lemon filling over the cooled crust evenly.
  6. Bake again for 20-25 minutes or until set with a slightly jiggly center.
  7. Cool completely before cutting into squares.
