  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots)
  • 1 large carrot
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme (or 1/2 tsp dried thyme)
  • litres / 6 cups chicken stock
  • 75g / 1/2 cup giant/pearl couscous
  • 250g / 2 cups cooked turkey or chicken
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. In a large pot, heat olive oil and butter over low heat. Add chopped onion, celery, carrot, garlic, and thyme. Sauté for about 5 minutes until vegetables soften.
  2. Pour in chicken stock along with cooked turkey and bay leaves. Bring to a boil, seasoning with salt and pepper.
  3. Add giant couscous or noodles to the pot once boiling. Cook over medium heat for about 10 minutes until tender.
  4. Remove from heat and sprinkle with chopped parsley before serving.
