  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp key lime zest
  • 1 tbsp key lime juice
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 cup buttermilk
  • 3/4 cup powdered sugar
  • 2 tbsp key lime juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  2. In a medium bowl, cream together the softened butter and sugar until light and fluffy.
  3. Incorporate eggs one at a time, mixing well after each addition. Add key lime zest, key lime juice, and vanilla extract.
  4. In a separate bowl, combine flour, salt, and baking powder. Gradually add to the wet mixture along with buttermilk until just combined.
  5. Pour the batter into the prepared pan and bake for 45 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  6. While baking, whisk together powdered sugar and key lime juice for the glaze.
  7. Once baked, cool for 10 minutes before removing from the pan. Drizzle glaze over warm bread.
