  • ½ cup light corn syrup

Instructions

  1. Prepare your surface by generously buttering a marble slab or large baking sheet. Set aside extra butter for your hands.
  2. In a heavy-bottomed saucepan, combine sugar, cream, corn syrup, and salt. Cook over medium heat while stirring until the sugar dissolves. Attach a candy thermometer and stop stirring. Continue cooking until the mixture reaches 260°F (127°C).
  3. Pour the hot candy onto the prepared surface and let it cool for about 10–15 minutes until safe to handle.
  4. Butter your hands well and start pulling the candy by stretching and folding it for 10–15 minutes until it lightens in color and becomes satiny.
  5. Pull into ½-inch thick ropes and cut into bite-sized pieces with buttered scissors. Allow to firm up at room temperature on wax paper.
