  • 1 and 1/2 cups all-purpose flour

  • 1 tsp vanilla extract
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Fold in sour cream and gradually mix in dry ingredients until smooth.
  5. Gently fold in the drained crushed pineapple.
  6. Pour batter into prepared pan and bake for 30-35 minutes or until golden and a toothpick comes out clean.
  7. While cooling, prepare glaze by mixing icing sugar with pineapple juice until smooth. Drizzle over the cooled cake.
