  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 egg (lightly beaten)
  • 1 cup panko breadcrumbs
  • 2 oz Japanese curry roux
  • 1 yellow onion (wedge cut)
  • 1 large russet potato (peeled and diced)
  • 1 large carrot (peeled and diced)
  • 2 cups chicken stock
  • ½ cup water
  • 2 cups cooked white rice

Instructions

  1. Season the pounded chicken breasts with salt and pepper. Set up a breading station with flour, beaten egg, and panko breadcrumbs.
  2. Dredge each chicken breast in flour, then dip in the egg before coating thoroughly with panko breadcrumbs.
  3. Heat vegetable oil in a large frying pan over medium heat. Fry the breaded chicken until golden brown, about 5–7 minutes per side. Drain on paper towels.
  4. In another pan, heat olive oil and sauté onions until translucent. Add garlic, potatoes, and carrots; cook for one minute.
  5. Pour in chicken stock and water. Bring to a simmer before adding Japanese curry roux until dissolved. Cook until vegetables are tender.
  6. Slice fried chicken and serve over rice topped with curry sauce.
