  2. In a large glass jar, combine lemon zest with the lemon juice. Seal and let sit in a cool, dark place for about two weeks, shaking gently every few days.
  3. After two weeks, prepare simple syrup by dissolving sugar in water over medium heat; let cool.
  4. Strain the lemon mixture through a fine mesh strainer into another container and discard solids.
  5. Mix the strained infusion with cooled syrup and stir well.
  6. Bottle and refrigerate until chilled.
