  • 3 cups red apple vinegar
  • 3 cups beef broth
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 leaves fresh sage
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat the beef dry and season generously with salt and pepper.
  2. In a heavy Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned (5-7 minutes). Remove and set aside.
  3. Sauté onions, carrots, and garlic in the same pot until softened (4-5 minutes).
  4. Deglaze the pot with red apple vinegar, simmering briefly.
  5. Return the beef to the pot. Add enough broth to cover about one-third of the meat along with fresh herbs.
  6. Cover tightly and braise in a preheated oven at 285°F (140°C) for 2.5 to 3 hours until fork-tender.
  7. Let rest for 10 minutes before slicing against the grain and serving with sauce.
