  • 1 pound boneless, skinless chicken breast (diced)
  • Salt and pepper (to taste)
  • 1 onion (cut into wedges)
  • 1 can (8 oz) pineapple chunks in juice
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water
  • 1 teaspoon oil (for rice)
  • 1/4 teaspoon salt (for rice)
  • 1/2 cup BBQ sauce (for thickening)
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Instructions

  1. Set the Instant Pot to sauté mode. Add oil and diced chicken; season with salt and pepper. Cook until browned, then add onions and cook for another minute. Turn off the Instant Pot.
  2. Stir in the pineapple (with juice), BBQ sauce, and diced peppers.
  3. Place a trivet over the chicken mixture. In an oven-proof dish that fits inside your Instant Pot, combine rice, water, oil, and salt. Stir well before placing on top of the trivet.
  4. Close the lid and set the valve to sealing. Cook on high pressure for 2 minutes; allow a natural pressure release for 10 minutes before manually releasing any remaining pressure.
  5. Carefully remove the rice dish and trivet. Fluff rice with a fork. Mix remaining BBQ sauce with cornstarch and water in a bowl; stir into the pot on sauté mode until thickened.
