  • 1 cup cherry tomatoes, quartered (or 2 Roma tomatoes, seeded and chopped)
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 tsp garlic powder)
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper. Coat the chicken thoroughly and marinate for at least 30 minutes.
  2. Prepare the Avocado Salsa: Combine chopped avocados with cherry tomatoes (or Roma tomatoes), corn kernels, red onion, red bell pepper, jalapeno pepper, cilantro, minced garlic (or garlic powder), lime juice, ground cumin, salt, and pepper in another bowl. Mix gently.
