  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 red bell pepper, thinly sliced

  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp freshly cracked black pepper
  • 1 tsp cornstarch + 2 tbsp water (slurry)

Instructions

  1. In a skillet, heat oil over medium-high heat. Add chicken and sear until golden brown and fully cooked (6–8 minutes). Set aside.
  2. In the same pan, reduce heat and add honey, soy sauce, Dijon mustard, and black pepper. Stir well then add cornstarch slurry; simmer for 2–3 minutes until thickened. Return chicken to coat with glaze.
  3. Sauté the bell pepper and spinach in the pan for about 2-3 minutes until tender but vibrant.
  4. Assemble your bowl by adding rice first, then topping with glazed chicken, sautéed veggies, and cherry tomatoes.
