  • 200 ml whole milk
  • 150 g toffee sauce (store-bought or homemade)
  • 100 g brown sugar
  • 1 tsp cinnamon
  • 2 egg yolks

  1. Peel, core, and chop the apples. In a saucepan over medium heat, combine them with brown sugar and cinnamon. Cook until soft.
  2. Blend the cooked apple mixture until smooth and let it cool completely.
  3. Heat double cream and whole milk in a saucepan over low heat. Gradually whisk in egg yolks until the mixture thickens slightly.
  4. Combine the apple purée, custard base, and toffee sauce in a mixing bowl; stir well.
  5. Pour into an ice cream maker and churn according to instructions until soft-serve consistency is reached. Alternatively, freeze in a container and stir every 30 minutes for about 3 hours.
