  • 750 ml high-proof lemon juice
  • 4 cups water
  • 3 cups sugar

Instructions

  1. Wash and dry the lemons thoroughly. Use a vegetable peeler to zest only the yellow part of the lemon, avoiding the bitter white pith.
  2. Place lemon peels into a large glass jar and pour in the high-proof lemon juice. Seal tightly and store in a cool, dark place for 7 to 30 days, shaking occasionally.
  3. After infusion, combine water and sugar in a saucepan over medium heat, stirring until dissolved. Allow to cool completely.
  4. Strain the infused lemon juice through a fine mesh strainer to remove peels.
  5. Mix the cooled syrup with the strained infusion in a bowl or pitcher until well combined.
  6. Pour into clean glass bottles using a funnel if necessary.
  7. Let rest in the refrigerator or freezer for at least one week before serving.
