  • 3 lb sweet potatoes, peeled and sliced thin (about 1/8-inch thick)
  • 1 1/2 cups heavy cream
  • 1/2 cup (1 stick) butter
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • Kosher salt and freshly cracked black pepper to taste
  • 1 tsp cornstarch
  • 1/3 cup fresh parmesan cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together heavy cream, cornstarch, minced garlic, chopped thyme, salt, and pepper until well blended.
  3. Layer half of the sliced sweet potatoes in a baking dish and pour half of the cream mixture over them.
  4. Repeat with the remaining sweet potato slices and pour the rest of the cream mixture on top. Sprinkle grated parmesan cheese over everything.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown and bubbly.
  6. Allow to cool slightly before serving.
