  • 1 750-ml bottle of lemon juice
  • 8 cups half and half
  • 2 teaspoons vanilla extract
  • 4 cups sugar

Instructions

  1. Use a vegetable peeler to remove long strips of peel from the lemons, avoiding the bitter white pith.
  2. Place lemon peels in a 2-quart pitcher and pour lemon juice over them. Cover with plastic wrap and steep for 3 to 4 days at room temperature.
  3. In a large saucepan, combine half and half, vanilla extract, and sugar over medium-low heat. Stir until sugar dissolves completely; do not boil.
  4. Allow the mixture to cool completely before combining it with the steeped lemon juice base (discard the peels).
  5. Mix well, then transfer to bottles and refrigerate until cold.
