  • 200 ml rapeseed oil (or Chinese Caiziyou oil)
  • 2 tsp sesame oil
  • 40 grams Sichuan chili flakes
  • 3 cloves garlic
  • 2 pieces star anise
  • 3 tsp Sichuan pepper
  • 2 pieces black cardamom
  • 2 pieces bay leaf
  • 1 piece cinnamon stick
  • 2 nuggets fresh ginger
  • 1 tsp salt
  • 2 tsp brown sugar
  • 12 tbsp black rice vinegar
  • 1 tsp sweet paprika powder (for color)
  • 23 tsp white sesame seeds (toasted)

Instructions

  1. Gather and measure all ingredients.
  2. In a saucepan, combine rapeseed oil and sesame oil; heat gently until reaching about 200°C (392°F), avoiding smoking.
  3. Add garlic, ginger, star anise, Sichuan pepper, black cardamom, bay leaf, and cinnamon to the hot oil; infuse for about 5 minutes.
  4. Remove from heat and stir in Sichuan chili flakes.
  5. Mix in salt and brown sugar thoroughly.
  6. Allow the mixture to cool before straining into a heatproof jar; add black rice vinegar and sweet paprika powder before sealing.
