  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • Salt & pepper
  • 1 tsp paprika
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 250 ml chicken broth
  • 200 ml heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp parsley
  • 1 tsp oregano
  • 800 g potatoes
  • 50 g butter
  • 100 ml warm milk
  • Salt & nutmeg
  • 400 g baby carrots
  • 1 tbsp butter
  • 1 tsp honey or brown sugar

Instructions

  1. Season chicken with paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat; sear chicken until golden brown. Remove and set aside.
  2. In the same skillet, melt butter; add minced garlic and sauté until fragrant. Stir in chicken broth, heavy cream, Dijon mustard, thyme, parsley, and oregano; let simmer until creamy. Return chicken to sauce; cook through.
  3. Boil chopped potatoes in salted water until tender. Drain and mash with butter, warm milk, salt, and nutmeg until smooth.
  4. Steam baby carrots until tender; glaze with melted butter and honey or brown sugar.
  5. Serve plated chicken drizzled with sauce alongside mashed potatoes topped with glazed carrots.
