  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9" x 5" loaf pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth. Add the grated zucchini, egg, olive oil, maple syrup, cinnamon, baking powder, baking soda, and salt. Mix until well combined.
  3. Gently fold in the flour using a spatula until just combined; avoid overmixing.
  4. Pour the batter into the prepared loaf pan and level the top with a spatula.
  5. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
