  • 4 cups butternut squash, diced and peeled
  • 2 tbsp canola oil
  • 1 lb ground turkey
  • 1 cup couscous
  • 1 ½ cups red onion, minced
  • 3 cups swiss chard, finely chopped
  • Juice from 1 lemon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine diced butternut squash with canola oil, nutmeg, cinnamon, salt, and black pepper. Toss until well coated.
  3. Spread the seasoned squash on a baking sheet in a single layer and roast for about 25-30 minutes until tender and caramelized.
  4. While roasting, prepare couscous by pouring boiling water over it in a pot. Cover and let sit for about 5 minutes until fluffy.
  5. In a skillet over medium heat, add canola oil and sauté red onion until translucent. Add ground turkey; cook until browned.
  6. Stir in spices (lemon pepper seasoning, paprika, garlic powder, onion powder) and mix well.
  7. Add chopped swiss chard to the turkey mixture until wilted, then gently fold in roasted butternut squash and couscous.
  8. Serve warm with fresh lemon juice squeezed on top.
