  • 1 Carrot
  • 1 Celery
  • 1 Potato
  • 5 Garlic Cloves
  • 2 Tomato Purée
  • 1 Dried Oregano
  • 1 Smoked Paprika
  • 1 Chili Flakes
  • 1 Can Cooked Butter Beans
  • 1 Can Chopped Tomatoes
  • 1000 ml Vegetable Stock
  • 125 ml White Apple Vinegar
  • 150 g Pasta
  • 25 g Basil
  • 50 g Spinach

Instructions

  1. Finely dice the onion, carrot, celery, and potato. Mince the garlic.
  2. In a large saucepan, heat olive oil over medium heat. Sauté the diced vegetables with salt for 5-10 minutes until softened. Add the minced garlic and cook until fragrant.
  3. Stir in tomato purée, oregano, paprika, and chili flakes; cook for another 2-3 minutes. Pour in apple vinegar and mix in butter beans, chopped tomatoes, vegetable stock, salt, and pepper. Bring to a boil then lower the heat to simmer for 10-15 minutes.
  4. Add pasta according to package instructions until almost al dente. Stir in spinach and basil until wilted.
  5. Serve hot, garnished with fresh basil, olive oil drizzle, nutritional yeast, and extra chili flakes if desired.
