  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)
  • Chopped pecans for garnish
  • Shredded coconut for garnish
  • Pineapple tidbits (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, mix flour, sugar, baking soda, and salt. Add eggs, vanilla extract, and crushed pineapple with juice; blend well.
  3. Fold in optional pecans and coconut if desired. Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean.
  4. Cool in pans for 10 mins then transfer to wire racks to cool completely.
  5. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in vanilla extract and pineapple juice until spreadable.
  6. Assemble by frosting one layer, adding optional toppings if desired, then place the second layer on top and frost the entire cake.
