  • 4 slices thick-cut turkey bacon (diced)
  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into pieces)
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a Dutch oven and cook turkey bacon until crispy; set aside.
  2. Season beef with salt and pepper, then brown in batches; remove from pot.
  3. Sauté onions, then add garlic, flour, and tomato paste until well combined.
  4. Stir in beef broth, Worcestershire sauce, and brown sugar; scrape up browned bits.
  5. Return beef and turkey bacon to pot; bring to a boil with thyme.
  6. Cover and simmer for about an hour.
  7. Add carrots and potatoes; cover and cook until tender, about another hour.
  8. Adjust seasoning if needed and stir in chopped parsley before serving.
