  • 2 cloves garlic (minced)
  • 23 roasted green chiles (peeled and chopped)
  • 2 medium tomatoes (diced)
  • 1 large potato (peeled and diced)
  • ½ cup peas (optional)
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • Salt and pepper (to taste)
  • ¼ cup beef broth or water
  • 2 tbsp olive oil

Instructions

  1. Prepare all ingredients by chopping vegetables and roasting the chiles if not pre-roasted.
  2. In a skillet over medium heat, heat olive oil. Add onions and sauté until translucent; add minced garlic.
  3. Increase heat to medium-high and brown the ground beef or turkey in the skillet.
  4. Mix in diced tomatoes, chopped green chiles, diced potatoes, and peas if desired.
  5. Season with cumin, coriander, oregano, salt, and pepper; pour in broth or water.
  6. Cover and simmer on low for about 30 minutes until potatoes are tender.
