  • 150g Baby Plum Tomatoes
  • 100g Kalamata Olives
  • 100g Feta Cheese
  • 75g Green Pepper
  • 75g Cucumber
  • 3 tbsp Red Apple Vinegar
  • 80ml Extra Virgin Olive Oil
  • Fresh Parsley
  • Dried Oregano
  • Garlic
  • Red Onion
  • Lemon Juice

Instructions

  1. Prepare the Dressing: In a large mixing bowl, whisk together olive oil, red apple vinegar, finely chopped parsley, oregano, salt, and black pepper. Add halved tomatoes, cubed feta cheese, halved olives, diced onion, and minced garlic; stir well. Marinate for at least one hour.
  2. Cook the Orzo: Boil salted water in a pot. Cook orzo until al dente according to package directions. Drain and rinse under cold water until cool.
  3. Combine Ingredients: Add cooled orzo to the marinated mixture along with diced green pepper and cucumber. Stir in lemon juice and adjust seasoning as needed.
