  • 1 lb ground beef and/or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup milk or chicken broth
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • Juice of 2 large lemons
  • 2 cups chicken broth
  • Olive oil for cooking

Instructions

  1. Soak breadcrumbs in milk or chicken broth for 5–10 minutes until soft.
  2. In a mixing bowl, combine soaked breadcrumbs, ground meat, grated onion (excess moisture squeezed out), minced garlic, egg, herbs, lemon zest, salt, and pepper. Mix gently and chill for 30 minutes.
  3. Form chilled mixture into uniform 1.5-inch meatballs.
  4. Heat olive oil in a skillet over medium heat and brown meatballs on all sides (about 5–6 minutes). Remove from skillet.
  5. In a saucepan, heat olive oil over medium heat; sauté minced garlic until fragrant. Add chicken broth, lemon juice, herbs, salt, and pepper; bring to a simmer.
  6. Add browned meatballs to the sauce; cover and simmer for 10–15 minutes until cooked through.
