  • 8 pieces of chicken
  • 4 medium potatoes
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 garlic cloves
  • 1 large onion
  • Fresh rosemary
  • Salt
  • Pepper
  • Oregano
  • Paprika
  • 1.5 tbsp honey
  • 1.5 tbsp mustard

Instructions

  1. Preheat the oven to 175°C (fan forced).
  2. Place chicken skin side up in a lined baking dish.
  3. Cut potatoes into desired thickness and arrange them around the chicken.
  4. Season with salt, pepper, oregano, and paprika.
  5. In a blender, combine lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard; blend until smooth.
  6. Pour half the marinade over the chicken and potatoes; flip the chicken skin side down and season again.
  7. Coat with the remaining marinade after flipping back to skin side up.
  8. Cover with wet baking paper and foil; bake for 90 minutes.
  9. Uncover and bake an additional 30 minutes for crispiness.
  10. Let rest for 10 minutes before serving.
