2 chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp dried oregano
1 tsp garlic powder
Salt & pepper
2 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 red onion, thinly sliced
1 cup Greek yogurt
1 cucumber, grated and drained
1 clove garlic, minced
1 tsp lemon juice
1 tsp fresh dill, chopped
Instructions
Prepare the tzatziki by mixing Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, fresh dill, salt, and pepper in a bowl. Chill until ready to serve.
Rub chicken breasts with olive oil and season with smoked paprika, oregano, garlic powder, salt, and pepper. Preheat grill or skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until cooked through. Let rest before slicing.
Assemble individual salad bowls by layering romaine lettuce, sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and sliced chicken. Top with tzatziki.
