  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons gochujang
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • Salt and pepper, to taste
  • Sesame seeds (optional)
  • Sliced green onions (optional)

Instructions

  1. In a bowl, whisk together the gochujang, miso paste, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  2. Place chicken thighs in a zip-top bag or bowl and pour the marinade over them. Coat well and refrigerate for at least 30 minutes or overnight.
  3. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  4. Arrange the marinated chicken in the dish skin-side up and season with salt and pepper.
  5. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C). Optionally broil for an additional 2-3 minutes for crispiness.
