  • 1 cup rolled oats (quick or old-fashioned)
  • 1/2 cup unsalted butter (softened) for filling
  • 4 ounces cream cheese (brick style, full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract for filling
  • 1/4 teaspoon salt for filling
  • 1 tablespoon whipping cream (or half and half if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger powder, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, beat softened butter with brown and granulated sugars until fluffy. Mix in molasses and egg.
  4. Gradually combine dry ingredients into the wet mixture; fold in rolled oats.
  5. Drop dough onto baking sheets and bake for about 9 minutes until edges set.
  6. For the filling, beat together softened butter and cream cheese; gradually add powdered sugar to achieve desired sweetness.
  7. Once cookies are cool, spread frosting on one cookie half and top with another to create a sandwich.
