  • 1 cup fresh peaches, peeled and diced

  • 23 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and optional cinnamon.
  2. In another bowl, mix milk, egg, vanilla extract, and melted butter until combined.
  3. Combine wet ingredients with dry ingredients and gently fold in diced peaches.
  4. Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry until golden brown on each side (about 2–3 minutes).
  6. Remove fritters with a slotted spoon and drain on paper towels.
