  • 3 large whole eggs
  • 3 large egg yolks
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup freshly squeezed lemon juice, about 4 lemons
  • Salt
  • 1 cup heavy whipping cream
  • 1/2 cup homemade lemon curd, room temperature
  • 1 cup heavy whipping cream, cold
  • 1/3 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Zest and juice fresh lemons to yield about 1/2 cup of juice.
  2. Make lemon curd by creaming butter, sugar, zest, eggs, and lemon juice in a saucepan over low heat until thickened (about 8-10 minutes). Cool.
  3. In a heatproof bowl, combine whole eggs, egg yolks, sugar, zest, and juice; whisk over simmering water until thick (around 12 minutes). Cool.
  4. Whip egg whites until stiff peaks form; fold into chilled lemon filling gently.
  5. Whip cream until stiff peaks form; fold into the mixture along with cooled lemon curd.
  6. Chill in a soufflé dish for at least one hour before serving.
