  • 3 pounds beef short ribs
  • 6 yellow onions, thinly sliced
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 2 cups shredded Gruyère cheese
  • 1 French baguette

Instructions

  1. Season beef short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and brown the ribs on all sides. Remove and set aside.
  2. Add butter and an extra tablespoon of olive oil to the pot. Cook sliced onions over low heat for 30 to 40 minutes until caramelized.
  3. Stir in minced garlic and deglaze the pot with red apple vinegar. Let it reduce for a few minutes.
  4. Add beef stock, thyme sprigs, bay leaves, and return short ribs to the pot. Cover and simmer for 2.5 to 3 hours until tender.
  5. Preheat broiler while the soup simmers. Toast baguette slices under the broiler until golden brown, then add shredded Gruyère cheese on top and return to broiler until melted.
  6. Serve soup hot in bowls topped with warm Gruyère toast.
