  • 3 garlic cloves, minced
  • 6 cups beef broth

  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves

  • 6 slices of baguette or crusty bread, toasted
  • 1.5 cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear the Short Ribs: In a heavy pot over medium-high heat, heat olive oil. Season beef short ribs with salt and pepper and brown on all sides (about 6 minutes per side). Remove from pot.
  2. Caramelize the Onions: In the same pot, add unsalted butter. Once melted, add sliced onions; stir occasionally until golden brown (about 30 minutes). Add minced garlic in the last few minutes.
  3. Build the Broth: Return short ribs to the pot with onions. Pour in beef broth, Worcestershire sauce, bay leaf, thyme leaves, salt, and pepper. Bring to a boil then reduce heat to simmer for about 2 hours or until ribs are tender.
  4. Prepare Toasted Bread: Preheat oven to broil. Place baguette slices on an oven-safe baking dish; toast until golden brown (about 5 minutes).
  5. Assemble & Serve: Remove the bay leaf from soup before serving. Ladle soup into bowls; top each with toasted bread slices and shredded cheese. Broil until cheese is bubbly and golden (about 2–3 minutes).
