Ingredients

Scale
  • 1 1/3 cup all-purpose flour
  • 1/4 tsp kosher salt
  • 1/3 cup powdered sugar
  • 1/2 cup cold unsalted butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 1 cup granulated sugar
  • 1/4 tsp kosher salt
  • 2 large eggs
  • 4 large egg yolks

Instructions

  1. Prepare the tart dough by mixing flour, powdered sugar, and salt in a food processor. Add cold butter and blend until pea-sized pieces form.
  2. Incorporate the egg and vanilla extract until a dough forms. Avoid overmixing.
  3. Chill the dough wrapped in plastic for at least one hour.
  4. Roll out the chilled dough into a circle and transfer it to a tart pan, trimming excess edges and pricking holes with a fork. Freeze for 20 minutes.
  5. Preheat the oven to 350°F (180°C). Bake the crust for about 15-20 minutes or until lightly golden brown, then let it cool.
  6. For the lemon curd filling, whisk together lemon juice, lemon zest, sugar, butter, salt, eggs, and egg yolks in a saucepan over low heat until thickened.
  7. Pour the lemon curd into the cooled tart crust and bake for an additional 10 minutes. Allow it to cool before serving.
