  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat oven to 170°C (340°F). Line a 23 cm springform pan with parchment paper and lightly grease the sides.
  2. Boil whole oranges in water for about 60 minutes. Drain, cool, remove seeds, and puree until smooth.
  3. In a large bowl, whisk eggs and sugar until pale and thickened. Stir in orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt. Gently fold into the egg mixture until just combined.
  5. Pour batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes until set; a skewer should come out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack.
