  • 1 lb fresh shrimp, peeled and chopped

  • 1 small onion, finely diced
  • 1 small green bell pepper, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup half-and-half (or milk and cream)
  • ½ teaspoon Old Bay seasoning
  • ¼ teaspoon paprika
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 large eggs, lightly beaten
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Place the unbaked pie crust in a pie dish and prick the bottom with a fork. Pre-bake for 8 minutes; set aside.
  2. In a skillet over medium heat, melt butter. Add onion, bell pepper, and celery; cook until softened (4–5 minutes). Stir in garlic for an additional minute.
  3. Sprinkle flour over the vegetables; stir to coat. Gradually whisk in half-and-half until thickened (about 3–4 minutes).
  4. Add Old Bay seasoning, paprika, salt, and black pepper. Mix in chopped shrimp and cook until just pink (2–3 minutes).
  5. Remove from heat; stir in beaten eggs, cheese, and parsley until smooth.
  6. Pour mixture into the pre-baked crust; smooth the top. Bake for 30–35 minutes or until golden brown and set.
  7. Let rest for about 10 minutes before slicing.
