  • 1 pack enoki mushrooms (split into 12 pieces)
  • 1/2 small yellow onion (sliced)
  • 2 tablespoons fruit juice (as mirin substitute)
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper
  • 1 cup dashi broth
  • 2 large eggs
  • 1 stalk green onion (diced)
  • 1 tablespoon sesame seeds

Instructions

  1. Prep enoki mushrooms by dividing them into small bunches. Roll each bunch tightly with one slice of beef to create individual rolls.
  2. In a small bowl, mix dashi broth, fruit juice, soy sauce, sugar, and black pepper until well combined.
  3. Heat olive oil in a large skillet over medium heat and cook sliced onions for about 3-5 minutes until caramelized.
  4. Place the enoki beef rolls in the skillet over the onions and drizzle the sauce mixture evenly on top. Cover and cook for about 3 minutes before flipping and cooking for another 1-2 minutes.
  5. Scramble eggs in a separate bowl and drizzle over the rolls in the skillet, allowing them to simmer for about 2 more minutes until fully cooked.
  6. Garnish with diced green onion and sesame seeds before serving warm with steamed rice.
