  • 4 cups whole corn kernels

  • olive oil mayonnaise
  • 1 cup plain Greek yogurt
  • Juice and zest of 1 lime
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  1. Cook pasta in boiling salted water until al dente. Drain and cool.
  2. For fresh corn: Roast or boil kernels; for frozen corn: sauté until warm.
  3. In a bowl, mix Greek yogurt, olive oil mayonnaise, lime zest and juice, chili powder, smoked paprika, garlic powder, salt, and pepper for dressing.
