  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder

  • ½ cup diced red bell pepper (optional)
  • 1 jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Prepare the corn by roasting fresh kernels in a skillet over high heat for 3–4 minutes if using fresh or frozen corn. Drain if using canned.
  2. In a large bowl, mix sour cream, mayonnaise, and softened cream cheese until smooth.
  3. Stir in shredded cheddar and pepper jack cheeses along with seasonings until well combined.
  4. Fold in prepared corn and optional fresh ingredients.
