  • 1 teaspoon Ground Cumin

  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Sweet Corn Kernels
  • 1/2 small Red Onion
  • 1/2 cup Greek Yogurt
  • 1/4 cup Mayonnaise
  • 1/2 cup Feta Cheese
  • 2 cups Cooked Jasmine Rice
  • 1/4 cup Fresh Cilantro
  • 1 teaspoon Tajín Seasoning

Instructions

  1. Marinate chicken by mixing lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Coat chicken thighs evenly and let sit for at least 15 minutes.
