Ingredients

  • 500g (1.1lb) fresh or frozen strawberries
  • 100g (1/2 cup) granulated sugar
  • 1 tablespoon lemon or lime juice
  • Pinch of salt

Instructions

  1. Remove the green leafy tops from the strawberries and roughly chop them.
  2. In a medium saucepan over low heat, combine the chopped strawberries, sugar, lemon juice, and salt.
  3. Cook while stirring regularly until the mixture simmers and juices are released.
  4. Increase heat slightly and let simmer for about 15 minutes, stirring often to break down the berries with a potato masher for desired smoothness.
  5. Once thickened, remove from heat and allow to cool; it will thicken further as it cools.
  6. Transfer to a clean glass jar and store in the refrigerator.
