  • 1/2 cup brown sugar
  • 1 cup canola oil (or vegetable oil)
  • 4 large eggs
  • 1 can (15 oz) pumpkin puree
  • 1/2 cup butter (for crumb topping)
  • 1 1/2 tsp salt
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 2/3 cup water
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8×4-inch bread pans and line them with parchment paper.
  2. In a large mixing bowl, combine flour, salt, baking soda, and spices. Mix well.
  3. Stir in granulated and brown sugars until combined.
  4. Make a well in the center and add oil; mix until just combined. Add eggs two at a time, then stir in pumpkin puree, water, and vanilla.
  5. Divide the batter between the prepared pans.
  6. For the crumb topping, mix flour, brown sugar, and cinnamon in another bowl. Cut in cold butter until crumbly and sprinkle over the batter.
  7. Bake for 55-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
