Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp active dry yeast
  • ½ cup granulated sugar
  • ¾ cup lukewarm milk
  • 3 large eggs
  • 1 tbsp lemon zest
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Vegetable oil (for frying)
  • 1 cup pastry cream or jam (chocolate, raspberry, or custard)
  • Powdered sugar (for dusting)

Instructions

  1. In a bowl, combine lukewarm milk, sugar, and yeast; stir and let sit until frothy (5-10 minutes).
  2. In a large bowl, mix flour, salt, lemon zest, eggs, vanilla extract, and melted butter. Add the yeast mixture and stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth. Alternatively, use a stand mixer.
  4. Place in a greased bowl, cover with a towel, and let rise in a warm place until doubled (1-1.5 hours).
  5. Roll out dough to ½-inch thickness; cut out circles using a round cutter.
  6. Heat vegetable oil to 350°F (175°C) in a deep pot; fry donuts in batches for about 2-3 minutes per side until golden brown.
  7. Drain excess oil on paper towels; fill each donut with pastry cream or jam using a piping bag.
  8. Dust generously with powdered sugar before serving.
